Cream of Zuchinni Soup

Here’s another recipe I’ve started to use quite a bit to use up all those zucchinis that all good at the same time:

Only adjustment I make is to slowly sauté the onions in button and olive oil first for 5-10 minutes until they almost start to caramelize. Also the sour cream isn’t necessary, in my opinion. Goes great with grill cheese sandwiches.
