Grandma Chantal’s Mini-Pizzas

These mini pizzas are fun for kids to help with, but put other Hawaiian pizzas to shame.

On that note, my favourite mini pizza by far is the Hawaiian pizza. However, you could adapt the topping to something else, I guess. I’ve just never wanted to.

INgredients

  • 1 package of english muffins (6 individual english muffins)
  • 300-500 g mozzarrella cheese (so 3/4 of most blocks of cheese)
  • 1 small can of tomato paste
  • 1/2 can of water
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 can of diced pineapples
  • 250 g deli ham
  • 50 g cheddar or maarble cheese (optional)

Instructions

  1. Preheat oven to 350 F
  2. slice english muffins in half and place face-up on baking sheet
  3. Mix tomato paste, water, Italian seasoning, garlic powder and salt together in a bowl
  4. spread the tomato paste onto english muffins (ya want just a little on each, like you’re spreading butter on toast)
  5. place 1-2 slices of ham on each english muffin
  6. open the can of pineapples and **drain out as much liquid as you can**. This is important otherwise the english muffins will be smoochy and boring
  7. put a TON of pineapples on each english muffin. There should be like 2-3 layers of pineapple tidbits on each english muffin
  8. grate the mozzarella cheese and dump it on each english muffin. It should be stacked like 2-3 inches high. Having the choose overflowing onto the pan is no crime. When people say they like this, they mean they really just like eating melty mozzarella cheese. If you want to eat healthy don’t eat this. This is cheesy. Put more cheese on it.
  9. (optional) sprinkle a little cheddar or marble cheese on top too. Not essential but makes it look less anemic.
  10. Bake for like 10 minutes, until the cheese is starting to melt
  11. Switch the oven to broil, 500 F. Then **do nothing**.
  12. Don’t go anywhere
  13. Don’t set the table
  14. Stay there and watch the mini pizzas. It will be 2-4 minutes. But don’t go anywhere. You want to broil them until they all have a touch of browned and have bubbly wonderful cheese on top. The cheese that fell on the pan might be slightly burned. Press on. It’s the main pizzas we’re concerned about getting a grand caramelized cheese on top. The difference between perfect and burnt is about 10 seconds. So don’t go anywhere, just stare at the mini pizzas until they’re perfect.
  15. Serve right away if you like, just don’t burn your mouth. Serve with some sort of salad.
