Argentinian Empanadas

This week’s universal Yums box focused on South America, so I decided to try something South American for dinner. I don’t know a lot of South American food, except ceviche, chimichurri, and empanadas. So I tried the last one.

The filling was a bit bland for me, so I added a chicken bouillon cube and salt to taste.

Also, I wanted a saucier filling, so added about a cup of broth and a tablespoon or two of corn starch.

I needed a vegetable side dish so just made a Caesar salad. Probably not South American at all, but really easy.

My 3-year-old and 6-year-old each helped, and by trying it as we went their tummies decided it wouldn’t be so bad. They ended up eating it all. (The only one who didn’t finish it was my 9-year-old who didn’t help.)
