Homemade Pesto and pasta recipe

Today we made some awesome homemade fettuccine and pesto for my moms birthday.

The pasta was just 4 eggs and 3 cups of flour (half whole-wheat flour). Then I used a pasta machine to turn the dough into pasta. I added lots of salt (like two tablespoons or so) to the water I boiled it in and boiled it for a couples minutes or so.

The gist is: 2 cups of fresh basil, a clove or two of garlic, a tablespoon or two of pine nuts, a few tablespoons of olive oil and as much salt you think tastes good, and mash it all up in a mortar and pestle. I doubled that recipe then it was about right for the amount of pasta I made.

We also throw some pan-fried chicken breasts, canned artichoke hearts and sun dried tomatoes in with the pasta and pesto. Serve it with a salad too. Yummers.
