Here’s a classic East Coast–style donair recipe made with lamb (instead of the usual beef). It’s tender, spicy-sweet, and perfect wrapped in pita with that signature garlicky-sweet donair sauce.

🥩 Donair Meat

Ingredients:

  • 2 lb (900 g) ground lamb
  • 2 tsp salt
  • 1 ½ tsp black pepper
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • ½ tsp cayenne pepper (adjust to taste)
  • ½ tsp Italian seasoning (optional)
  • 2 tbsp breadcrumbs (helps bind)
  • Optional: ½ tsp sugar (for a milder balance)

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix all ingredients very thoroughly — knead it like bread for at least 5–10 minutes. The goal is a dense, sticky texture (no air pockets).
  3. Shape into a tight loaf (like a dense meatloaf) and place on a wire rack over a baking sheet.
  4. Bake for about 1 hour, or until internal temperature reaches 160°F (71°C).
  5. Let it cool completely, then refrigerate for at least 2 hours or overnight (this makes it firm enough to slice thinly).
  6. When ready to serve, slice very thinly and pan-fry on medium-high heat until the edges are browned and crispy.

🍶 Donair Sauce (the signature sweet garlic sauce)

Ingredients:

  • ½ cup sweetened condensed milk
  • ¼ cup white vinegar
  • ½ tsp garlic powder

Instructions:

  1. Whisk the condensed milk and garlic powder together.
  2. Add vinegar slowly, stirring gently until the mixture thickens (it will set into a creamy texture).
  3. Refrigerate until serving.

🥙 Assembly

You’ll need:

  • Pita bread (soft, warmed)
  • Chopped onions
  • Diced tomatoes
  • Lettuce (optional — not traditional but common)
  • Shredded cheese (optional — more Halifax-style if you like)

To serve:

  1. Warm the pita (microwave 10 seconds or steam briefly).
  2. Add fried lamb slices, onions, and tomatoes.
  3. Drizzle plenty of donair sauce.
