Pandan Chiffon Cake

We discovered pandan cakes in a recent Universal Yums box: it’s green, a little fragrant, and puffy as air.

We wanted more, so ordered some pandan powder and searched for a recipe. Found this:

I kinda winged it though: recipe said to use fresh pandan leaves, so I instead just soaked a lump of pandan powder in some water, then filtered the pandan out, and used 90g of the water on the recipe.

The merengue was so enticing I made some more to put on top kinda like a frosting.
